Some changes were:
More liquids, such as increasing the honey and peanut butter to a full cup. I also increased the amount of coconut and wheat germ. Last time I left the almonds fairly chunky, which I found to be slightly irritating when eating, so this time I did a finer grind on the almonds.
Here is the result...tastes awesome, by the way, plus the moistness of the granola was maintained, as you can see in the bottom photo.

All I want for Christmas is some of Matt's granola (hint, hint)! I wonder what it would taste like with dried cranberries?
